Ingredients: *corn tortillas, homemade enchilada sauce, *black beans, *butternut squash, *pepper jack cheese, spinach, *corn, *sweet potatoes, scallions, cumin, salt, pepper


Cooking instructions: Keep refrigerated or frozen. Does not need to be pre-thawed. Preheat oven to 400°F. Remove foil and plastic wrap, re-cover with foil and bake for 30 minutes. Remove foil and bake until bubbly, about 15 minutes more. Consume within 3 days of thawing.
