Ingredients: *corn tortillas, homemade enchilada sauce, *black beans, pepper Jack cheese, *sweet potatoes, *spinach, corn, scallions, cumin, salt, pepper


Cooking Instructions: Keep refrigerated or frozen. Does not need to be pre-thawed. Preheat oven to 400å¡F. Remove foil and plastic wrap, re-cover with foil and bake for 30 minutes. Remove foil and bake until bubbly, about 15 minutes more. Consume within 3 days of thawing.
